Turkey, Caramelized Onion and Spinach Pizza


I am a foodie and I admit that I am addicted to pizza, so this is my attempt to try to make the healthiest and best tasting pizza I can.  Give it a try and let me know what you think!

Ingredients
1 Udi's gluten free pizza crust (in the freezer section)
1/2 cup marinara sauce (no sugar added)
1/2 pound ground turkey (cooked)
1/4 cup caramelized onions
2 oz Parmesan cheese
1/2 cup fresh spinach chopped

Instructions:
Top the pizza with the marinara sauce, cooked turkey, caramelized onions and cheese and bake at 375 degrees for 5-7 minutes.  Once you remove the pizza from the oven, top with chopped spinach and serve.

Creamy Chicken Taquitos


This picture does not do the taquitos justice...but I just wanted to eat them so they disappeared before I got a better picture.  Found this recipe on pinterest and it is definitely a keeper!

Ingredients:
3 oz cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic, or garlic powder
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken
corn tortillas
kosher salt

Instructions:
1. Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray. Heat cream cheese in the microwave for about 20-30 seconds so it’s soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.

2. Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer.

3. Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.  Roll up tortillas and place seam down on a baking sheet, not touching one another.  Spray lightly with cooking spray, or lightly brush with olive oil and sprinkle lightly with kosher salt.  Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.  Remove from oven and let cool slightly before serving.  Dip in green salsa and serve with avocado.

Zucchini Oven Fries

Loving the fresh zucchini from my garden right now.  This is one delicious way to enjoy zucchini!

Ingredients:
zucchini
egg
breadcrumbs
cooking spray

Instructions:
1. Slice zucchini into 3-inch-by-1/2-inch sticks. Dip into beaten egg (or egg substitute), then into seasoned breadcrumbs.
2. Place on a baking sheet, spritz with cooking spray and bake at 425 degrees for 30 minutes, turning zucchini fries after 15 minutes.

Homemade Vanilla Ice Cream & Figs

 
 
 

This is a match made in heaven!  Who doesn't love homemade vanilla ice cream and then add amazing ripe figs on top.  So good! 
 
Ingredients:
2 quarts half and half
1/2 pint heavy cream
1 1/2 cups sugar
4 teaspoons vanilla extract
1 pinch salt
fresh figs                                             
 
 
Instructions:
Combine half-and-half, cream, sugar, vanilla and salt in freezer container of ice cream maker. Freeze according to manufacturer's instructions.  Scoop ice cream when finished and top with fresh figs.

Penne with Herbs, Tomatoes and Basil


Perfect light summer dinner!  I don't know about anyone else but when I see the red, orange and yellow sweet cherry tomatoes at the grocery store I grab them and then decide what I can make with them....that is if I don't snack on too many of them.

Ingredients:
8 ounces uncooked penne pasta
1 cup frozen green peas, thawed
3 tablespoons extra-virgin olive oil
6 garlic cloves, thinly sliced
3 cups cherry tomatoes, halved

1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup thinly sliced fresh basil leaves
3 tablespoons chopped fresh flat-leaf parsley
1 ounce fresh Parmesan cheese, shaved (about 1/4 cup)


Instructions:
1. Cook pasta according to package directions, omitting salt and fat. Add peas during last 2 minutes of cooking. Drain.

2. Heat a large nonstick skillet over medium-low heat. Add oil; swirl to coat. Add garlic; cook 4 minutes or until garlic begins to brown, stirring occasionally. Increase heat to medium-high. Add tomatoes to pan; cook 1 minute. Add pasta mixture, salt, and pepper to pan; cook 3 minutes or until thoroughly heated, stirring occasionally. Stir in basil and parsley. Sprinkle with cheese.

Nutella Popsicles


Chocolate is one of my favorite foods and Nutella is one of my favorite forms of chocolate.  I enjoy making Nutella cakes (Bundt Cake Link), drizzling Nutella on my toast in the morning and now in frozen form!  If you like Nutella, these are easy to make and delicious!

Makes 8 zoku pops
Ingredients:
1 ½ c. Milk
½ c. Nutella
 
Instructions:
  1. Whisk together the milk and Nutella until mixed uniformly. Chill mixture for at least 2 hours.
  2. Pour into Zoku pop slots and chill for 7-9 minutes, per Zoku instructions.
  3. Enjoy!

Lemon Bundt Cake

I brought this cake for a work picnic and the lemony cake was a perfect summer desert!

Ingredients:
1 box of lemon cake mix
1 small box of instant vanilla pudding
1 small box of instant lemon pudding
1/2 cup of veggie oil
1 cup water
1/4 cup fresh lemon juice
 4 eggs
2 cups powdered sugar
2 lemons, juice plus zest, divided

Instructions:
1. Preheat oven to 350 degrees
2. Grease (I use coconut oil) a 10 inch bundt pan
3. In mixing bowl, combine cake mix, puddings, oil, water, 1/4 cup juice and eggs with electric mixer.  Pour into prepared pan and bake 40-45 minutes or until toothpick inserted comes out clean.
4. Let cake rest on counter in pan 10 minutes.  Then, invert cake onto serving plate to finish cooling. 
5. To make the glaze, combine powdered sugar with the zest and juice of one lemon.  Mix together with a spoon.   (Add more powdered sugar if your glaze is too runny or more lemon juice from your second lemon if it's too thick.)  Spoon over cooled cake.
